What makes the perfect 99?

With the weather looking good for the coming days, the sales of 99s are expected to soar.
The whipped ice-cream, cone and flake combination is flavour of the month during the summer season.

We asked Dungarvan Co. Waterford based ice-cream maker Maurice Butler to tell us what makes a good 99:

"That's the million dollar question to a point, I suppose it's a bit like a potato question. When everyone goes out foreign they long for the things they grew up with.

Really it is the basics, it's good quality. In our case it's good quality machinery, good quality ice-cream, we make our own which that kinda helps.

People are drawn into the fact when they were ten years of age they were getting these 99s and that's all Ireland had like."

We then took to the streets of the South East to find out what you think makes the perfect 99:

"Well they're for the Summer, chocolate, creamy, lovely oh gosh lovely ice-cream, real thick creamy ice-cream and then a nice big flake to stick in it. Somewhere nice to sit out and enjoy it."

"I suppose plenty of ice-cream, sometimes they're small."

For those who aren't a fan of the vanilla ice-cream and flake combo - fear not.

Maurice explained  how peoples palettes have changed over the years:

"Ireland is progressing, it's a brilliant food country. People are going out foreign and experiencing gelato ice-cream, you know the proper real hand made or artisan ice-cream on the continent and they're coming back and looking for more.

So definitely the palette has changed from vanilla to right across the spectrum. We make all our own ice-cream from scratch and amazingly I have access to 600 flavours from flavour houses right across Europe."
